The free radical scavenging potentials of various solvent extracts from foxtail millet- whole flour and bran at different concentrations were tested by the DPPH method and the results are shown in Figs. 2 & 3 respectively. Antioxidant reacts with DPPH, which is a stable free radical, and converts it to α,α-diphenyl-β- picryl hydrazine.
