Frozen and thawed fish products are in general characterized by having a lower quality than fresh ones due to the osmotic removal of water, denaturation of protein and mechanical damage (Thyholt & Isaksson, 1997).Lipid oxidation occurring during frozen storage leads to the formation of free radicals and hydroperoxides, which cause oxidation of pigments, flavors, and vitamins.
